Black bean quesadilla

Mash canned black beans, add cheddar, and fold them into one tortilla. Cook both sides in a skillet for a simple dinner or lunch.

Ingredients
- 1 medium tortilla
- 1/2 cup Canned black beans (85 g) — Approximate; measure after draining and rinsing.
- 6 tbsp Shredded cheddar (42 g) — Shredded cheese; 6 tbsp is ¼ cup plus 2 tbsp. Measure loosely.

Method
- Drain and rinse the canned beans, then mash them roughly in a bowl with a fork.
- Spread the beans over half of the tortilla, leaving a small border. Sprinkle on the cheese and fold the tortilla closed.
- Warm a nonstick skillet over medium-low heat. Add the folded tortilla and cook for 2–3 minutes per side, until browned and the filling is hot. Reduce the heat if it browns too quickly.
- Move to a plate or board and let it cool briefly before eating.
Helpful notes
- A medium tortilla makes one light meal. Pair with fruit or another side if needed.
- A nonstick skillet is assumed; add a small amount of oil if your pan needs it.
