Cheesy bean baked potato

Microwave a potato, then fill it with black beans and cheddar. A dinner for one with no oven or stovetop cooking.

Ingredients

  • 1 medium potato — About 8 oz each; larger potatoes need longer to cook.
  • 1/2 cup Canned black beans (85 g) — Approximate; measure after draining and rinsing.
  • 1/4 cup Shredded cheddar (28 g) — Shredded cheese; measure loosely, without packing it down.

Method

  1. Scrub the potato under running water. Pierce it several times with a fork and put it in a microwave-safe bowl.
  2. Microwave on high for 4 minutes. Carefully turn it with heat protection, then continue in 1-minute bursts until a fork slides easily into the center, usually 3–5 minutes more.
  3. While it cooks, drain and rinse the beans. Let the cooked potato stand for 2 minutes, then carefully split it on a cutting board; steam will escape.
  4. Return the potato to the bowl, add the beans and cheese, and microwave in 30-second bursts until the filling is steaming hot and the cheese melts.

Helpful notes

  • Potato size and microwave power change the time. Check tenderness instead of relying only on the clock.
  • Do not wrap the potato in foil in the microwave.
