Small-pot cinnamon rice pudding
Simmer a small portion of dry rice in milk with sugar and cinnamon. A stovetop dessert for one that needs occasional stirring.

Ingredients
- 2 1/2 tbsp Long-grain white rice (30 g) — Approximate; measure dry rice before cooking.
- 1 cup Milk (240 ml)
- 1/4 cup Tap water (60 ml)
- 1 tbsp Granulated sugar (12 g)
- 1/4 tsp Ground cinnamon (0.6 g)

Method
- Put the rice, milk, and measured water in a small saucepan.
- Warm over medium-low heat until it gently simmers. Reduce the heat so it bubbles only slightly.
- Cook uncovered, stirring often and scraping the bottom gently, until the rice is tender and the mixture is creamy, about 30–35 minutes. Add a small splash of water if needed before the rice is tender.
- Stir in the sugar and cinnamon, then remove from the heat. Rest for 5 minutes; the pudding thickens as it cools.

- Milk can scorch or boil over; keep the heat low and stay nearby.
- Start with dry rice; this recipe does not assume leftover cooked rice.
