35 minutes total · 2 servings · baking

Prep: 7 minutes. Cooking: 18 minutes. Waiting: 10 minutes, included in total time.

Ingredients

  • 1 medium banana — Use a ripe banana.
  • 3/4 cup Rolled oats (60 g)
  • 1 tbsp Peanut butter (16 g)

Equipment and available appliances

  • Oven
  • 1 × Microwave-safe bowl or deep glass dish
  • 1 × Fork
  • 1 × Eating spoon
  • 1 × Measuring cups and spoons
  • 1 × Nonstick baking sheet
  • 1 × Oven mitts

Method

  1. Heat the oven to 350°F / 175°C. Use a nonstick baking sheet.
  2. Peel and thoroughly mash the banana in a bowl. Stir in the peanut butter, then the oats. The mixture should hold together when scooped.
  3. Divide into 6 small mounds on the baking sheet and flatten them slightly; they will not spread much.
  4. Bake for about 15–18 minutes, until the tops look dry and the edges are lightly colored. Use oven mitts to remove the tray.
  5. Leave on the tray for 10 minutes to firm up before lifting them.

Helpful notes

  • These are soft oat bites, not crisp traditional cookies.
  • Banana size affects the texture; if the mixture is dry, add a teaspoon of water at a time until it holds together.
